The first one worth mentioning is the BFG. It is the gun of the titular Doom Guy. It also shows up in a few of the Alien game.
I remember getting it in Alien Isolation. Bayonetta has fun high guns. She can shoot with her legs and she does the double jump with them.
Evelyn shoots your blood as a bullets. It is from bloodborne. Pandora is a gun of many forms or a briefcase that turns into many guns.
Carter from Final Fantasy Type Zero has an amusing gun that changes elements. Gal Gun has an angelic weapon that kills demons.
When used in humans, it makes them experience pleasure. LOL. Megaman has the burster gun that does literally everything.
Prey has the quasiparticle beam gun. It makes the monster stronger until they explode. You are more likely to get killed by the monster, before you make him explode.
